Sadya is an inevitable part of Kerala celebrations for festivities like Onam, Vishu, Aranmula Boat race(valla sadya), marriages, engagements, choroonu(infant's first rice eating ceremony) and other important occasions. Sadya dishes can have about 24-28 dishes in a single course and can range upto 64 dishes in valla sadya(Aranmula Boat race).
Sadya is generally served in a plantain leaf, and we need to sit on a mat on the floor to have sadya. Nowadays, these are replaced with paper leaves where we don't get esh leaves. There is a proper way of serving on the plantain leaf starting from table salt to payasam. The general order of serving the dish includes two tablespoon of rice served with parippu curry followed by another 2 tbsp of rice with sambar, then kalan and rasam. Pacha moru and moru curry(pullisery) is also served. The sides are laid out on the side of the leaf which are had along with the rice- curry combo. The common sides include thoran, aviyal, achar,kootu curry, olan, pachadi, khichadi, inji puli, chips, sharkara varetti, pappadam and a small banana. Ada pradhaman, paalada and any other payasam(kheer) is served at the end. Marriages serve semiya payasam with boli which makes a yummy combo.
