Cutlets are one of our family favourites, and chicken cutlets are really yummy.But then, I always used to fry the cutlets.Then, I happened to eat baked vegetable cutlets from one of my friend and so came the idea of avoiding the excess oil.Let me tell you, the baked ones also tasted equally good and healthy too.They make a guilt free snack. Do try and enjoy !!
BAKED CUTLETS |

Serves ~ 10-12 cutlets

Ingredients
chicken 300 gms
potato boiled & mashed 2
onion 2 fine choppped
green chilli 4-5 fine chopped
carrots grated 1/2 cup(optional)
ginger garlic paste 1tbsp
coriander leaves or cilantro 1/2 cup
curry leaves 1 sprig fine chopped
pepper powder 1tsp
garam masala 1tsp
salt to taste
bread crumbs 1 cup
egg 1 lightly beaten
oil to smear on top of cutlets
Method
- Cook the potatoes in a pressure cooker until 3-4 whistles with skin.Then, drain water and add cold water.Peel the skin off and mash it well.
- Cook the chicken with salt and pepper. Reserve the stock for soup making, and mince the rest of the cooked chicken in a mixer jar after cooling.
- Grate the carrot, cut green chillies, chop onion, cilantro, curry leaves and keep aside.
- Place a pan on medium heat and pour oil. Add the ginger garlic paste and sauté well.Slide the chopped onion and sauté for 5 minutes.Add the green chillies, carrot and cilantro. Add the pepper powder, garam masala and adjust salt.Cook for 3-4 minutes.Add the mashed potatoes. Switch off flame, remove from heat and cool it.Shape small balls into cutlets.
- Beat the egg lightly with a fork in a bowl. Add the bread crumbs in another plate.Dip the cutlets into egg mixture and then roll it in bread crumbs. Repeat doing till you finish all cutlet mixture.
- Preheat the oven to 350 degrees F /180 degrees C and place the cutlets in an oil sprayed tray.Spray oil on top of each cutlet too lightly.Place it in the oven and bake for 20-25 minutes in all.Half way, turn the cutlets upside down and place again.Broil the last minute to get a browned effect, if necessary.
OR If frying, then heat oil in a pan and slide in the made cutlets. Fry them till deep golden brown. Drain on paper towels and serve warm with ketch up.

*You can also deep-fry them instead of baking.
* You can use the chicken stock for making soups.
* You can make roll shapes too instead of making disc shapes.
