Green squash and yellow squash are not commonly found in India.Here it is readily available.The looks are similar to bottle gourd and tastes also the same.The squash leaves a stain when I peeled the skin and cut.The better way is to cut and put it in water.I just happen to pick it up to try and we tasted a different veggie.
Ingredients
Green/yellow squash 1
onion 1 chopped
ginger 1tsp
garlic 2pods
tomato 1 chopped
turmeric powder 1tsp
chilli powder 1tsp
coriander powder 1tsp
garam masala 1/2tsp
fennel seeds 1tsp
coconut grated 3tsp
cumin seeds 1/2tsp
curry leaves
oil
salt
Method
Wash ,cut the squash and put it in water.
Place a pan on medium heat and heat oil .
Splutter the fennel seeds.
Saute onion till light brown.
In the mean time ,grind the ginger, garlic,coconut and cumin seeds.Make a fine paste and keep aside.
Add the tomatoes and mash it completely
Add all spices and wait till the flavour comes.
Add the grinded paste and squash
Add the salt and cook for 6-7minutes.
Garnish with curry leaves and is ready to serve.
