Uluva Ela Thoran | Methi Leaves Stir Fry

Methi leaves are known to have many medicinal properties.They have a bitter taste and so I displaced it with eggs.The taste and the nutritional values improved a lot.Kids usually tend to refuse the bitter veggie but they ate it well with this recipe.

Ingredients
Methi leaves 1large bunch
egg 1
onion 1 chopped
ginger 1tsp chopped
turmeric powder 1/2tsp
pepper powder 1tsp
salt
oil 2tsp


Method
Wash the methi leaves thoroughly,remove the hard stalk,sort the leaves and chop it.


Place a nonstick pan on medium heat and add oil.
Saute onions for a minute and then put the methi leaves.
Put turmeric powder,pepper powder.
Cook for 5 minutes  and then add salt.
Dry it by stirring and then break an egg by making a well into it.
Scramble the eggs and dry it.
Methi stir fry is ready.
