Ingredients
Mixed vegetables 1 1/2cup (I have used corn,beans green peas,carrot,potato)
or
available veggies cut separately 1/4 cup each
onion 1 chopped
tomato 1 chopped
ginger garlic paste 11/2 tsp
cilantro 1/4 cup chopped
peppermint leaves 3-4
cumin seeds 1tsp
coriander powder 1tsp
chilli powder 1tsp
garam masala 1tsp
turmeric powder 1/2tsap
coconut grated 3 tsp(optional)
cashews 5-6 (soaked in water for 1/2 an hour)
oil 4tsp
salt
Method
Heat oil in a pan and add the chopped onions.
Saute for 2 minutes and put the ginger garlic paste.
Add the chopped tomato and saute for a minute.
In the mean time, grind the coconut,cashews,cumin seeds,coriander powder,garam masala,chilli powder,peppermint leaves to a fine paste.
Add the paste ,turmeric powder,salt and the vegetables.
Cover and cook for 9-10 minutes.
Garnish with cilantro and serve hot.
