Asparagus is one of the most nutritionally balanced vegetable in existence.They are low calorie source of potassium and folate.There are many nutritional values and their ratio is given here ,Interested may please look into the link.They are good sources of vitamin C and fibre.This is a recipe taken from Suja's Kitchen corner -try it ,she has exotic recipes in her space.I liked the idea of adding eggs into this and bookmarked to try it out.Try n enjoy!!
Friends,this is the first time I tried Asparagus and that turned out very good.Earlier I had tried the methi leaves egg stir fry,you can view that recipe here ,
the recipe is almost similar to that.All in the family enjoyed it with
rice.Special thanks to Suja for sharing such a wonderful and simple
recipe.
Ingredients
asparagus 1 bunch
onion 1 small chopped
eggs 2
coconut 4tsp
cumin seeds 1/2 tsp
garlic pods 2
pepper powder 1tsp
turmeric powder 1/2 tsp
mustard seeds 1 tsp
curry leaves
red dried chillies 2
salt
oil 3 tsp
Method
asparagus 1 bunch
onion 1 small chopped
eggs 2
coconut 4tsp
cumin seeds 1/2 tsp
garlic pods 2
pepper powder 1tsp
turmeric powder 1/2 tsp
mustard seeds 1 tsp
curry leaves
red dried chillies 2
salt
oil 3 tsp
Method
- Wash and cut small round pieces of asparagus,discard the tough woody base.
- Chop onion and keep aside.
- heat oil in a pan and splutter mustard,red chillies,curry leaves.
- Add onion and saute for 2 minutes.
- Add the chopped asparagus, and fry for a minute.
- In the mean time ,grind coarse the coconut,cumin and garlic pods without water.
- Add this mix to asparagus, and salt.
- Cover and cook for 5 minutes.
- Open the lid and break two eggs in the centre by making a well.
- Scramble the eggs till it is coated with asparagus.
- Add pepper powder as listed and dry up the stir fry.
- Asparagus egg thoran is ready to serve.
