Plantains(ethakka/ nendran banana) are very low in saturated fat, cholesterol and sodium .It is a good source of vitamin A, vitamin C ,vitamin B6 and potassium. The only bad point is it contains large amount of sugars and hence, not suitable for diabetics.
Pancakes are familiar with all and there are numerous varieties to it. Yesterday, I had some sweet plantains with me and thought of blasting it for breakfast. All at home enjoyed this healthy recipe with honey.

Preparation time ~ 10 minutes
Cooking time ~ 15 minutes
Serves ~ 12 pancakes
Ingredients
wheat flour 2 cups
sweet plantain 2 steamed n mashed
sugar 2 tsp (optional)
baking soda 1/2 tsp

milk 1 cup
water 3/4 cup
butter 2 tbsp to smear

Method
- Steam the plantains in an steamer and remove the seeds if very big, mash the rest and place it in a bowl.
- Add wheat flour in a bowl, add the baking soda, salt. Mix well.
- Add the mashed bananas to a blender jar, to this add the dry ingredients in batches. Add milk in batches and prepare a thick pancake batter.
- Add the vanilla extract, give a quick mix.
- Place a non stick pan on medium flame and pour ladleful of batter, don't spread much and make like thick dosa. Flip the other side after 1.5 minutes once you see bubbles break up and the surface looks cooked. Add a little butter on top and then flip to cook the undersurface for 30 seconds.
- Wipe the non stick pan with a paper towel for smooth pancakes and then pour batter, repeat making the same till you finish the batter.
- Serve pancakes with honey or pineapple topping or chocolate syrup.
TIPS
You can replace bananas for plantains. I have tried banana pancakes too(see below in pic).In case you use bananas, then simply blend two bananas in a blender without water and then add to the batter. Rest of the steps remain the same.
