Ari Puttu | Kerala Style Puttu | Traditional Puttu

Ari Puttu is a traditional Kerala recipe made with rice flour. Puttu is usually prepared in a vertical puttu maker /cheratta (coconut shell) puttu maker or can be steamed in idli cooker with banana leaves.The vertical mould gives a nice shape to the puttu. I had the cheratta puttu maker and vertical puttu maker, prepared in it. The puttu maker is placed on a closed pressure cooker with water boiling in it (remove the weight/regulator ,place the puttu maker). Do give this a try and enjoy !!

Preparation time~ 10 minutes

Serves ~ 2 cheratta puttu
Ingredients
rice flour /puttu podi 1 cup (preferably chemba rice flour if available;refer notes)
grated coconut 1/3 cup
salt
water 1/3 cup



Method

  • Take the rice flour(refer notes) in a bowl,add salt to it and mix well. Sprinkle water slowly into the rice flour little by little,such that the rice flour is just moist and not drenched(check in between by trying to make a ball with your hands,if it holds together stop pouring water into the flour.)
  • Place a pressure cooker or idli cooker with half filled water on stove.I used pressure cooker,close the lid.Take the puttu maker,add grated coconut at the base,fill in some flour,then again coconut alternate with flour till you reach the top.
  • Close the puttu maker and place on the pressure cooker after removing the weight/regulator. Wait till the steam seeps through the flour and reaches the top. It takes around 5-6 mins to cook through.Remove from heat and poke the base of the maker with a pointer or knife into a plate so that it comes out in proper shape. Puttu is ready to serve with kadala curry. Try this fish molly combo too.



NOTES
* The homemade rice flour recipe is here. This flour can be stored for 4-5 days maximum(you can use this flour for making unniyappams if you have left overs after making puttu)
* Store brought plain rice flour works but it doesn't give the soft texture of puttu as it is ground smooth and is roasted as for idiyappam.You can always use store brought puttu podi for making puttu,prefer to buy the chemba (red)flour.
* Don't add water at a stretch into the rice flour,add little by little. Otherwise you will have cake batter. The rice flour(puttu podi) looks like bread crumbs.
