My 150th post and A Sponge Cake Roll | Vanilla Swiss Roll !!!!!

How fast time flies off?It was a time when I just started the blog and now I have crossed 150 posts.I just can't believe my eyes because never thought I will be able to write the recipes and share with all..Never was worried about cooking..my only concern was to find time to click pictures and to write the recipe,Anyways I thank my family especially my two kids for their patience and now my elder son tends to ask me ,''Mom,Are you not clicking the photos??"So that he can grab it right away after that...And above all,the big rush of friends in the blog world have always tempted me to try out a new recipe..Thank you ,Friends..Am not mentioning the names of any one,it is each one of you at one time or the other supported my blog in a very pleasing way!!Thanx again and so thought to share a sweet recipe..Sponge Cake Roll!!






Baking for me just started after reaching US, initially it was the the cake mixes and then gradually shifted to cakes from scratch,then tried baked cutlets,broiled chicken and now finally this recipe was a challenging part as far as am concerned.Anyways I was happy at the outcome,never thought I can roll it...My elder son who is a fan of these rolls was the inspiration behind trying out this recipe.Hope you will all like it !!!








Ingredients
All purpose flour(maida)- 3/4 cup
corn starch- 2tbsp
sugar -1 cup
eggs -3
hot water 1/3 cup
baking powder 1tsp
vanilla extract 1tsp
salt 1/4 tsp
For the filling
heavy whipped cream 1 cup
gelatin 1 tsp
sugar 1/3 cup
sugar to dust

Roll before cutting slices

Method

Beat the eggs in a blender and blend till its creamy and thick in consistency.Add in the sugar.Add the vanilla extract.Sift the flour,corn starch in a bowl and add salt,baking powder.Mix well.Add in the beaten eggs mix and make a thin batter,add the hot water.Pre heat oven to 375 degrees and line a large tray with parchment paper;butter the paper.Pour the mix into it and spread with a offset spatula.Place it in the oven and bake at 375degrees for 15minutes.Take a tea towel and  dip it in warm water.Squeeze the water completely,unfold the towel on a wire rack and spread it.Spread confectioners sugar on top.Turn the baked tray upon it. Remove the parchment paper slowly and roll the tea towel along with the baked cake.Cool down completely.In the mean time,Beat the whipped cream till it reaches peak.Fold in the sugar, and add the gelatin.Unfold the tea towel once its cooled, Spread the whipped cream mix till 3/4 th of the cake.Roll it over again tightly and roll the towel as a tight wrap.Place it in the refrigerator.Remove after 30 minutes to 1 hour,Cut round pieces.Serve it and enjoy!!

Servings 10 sponge cake rolls



NOTES
* You can also use any filling of your choice.
* You can add fresh chopped strawberries too to the mix.
* Leave the cake rolled in the refrigerator so that it sets in properly.

  45. wow!!! - The roll just looks out of the world.
    I remember those days(yes, as a kid), going to a nearby bakery shop to buy this cake roll once every week. I think it used to cost me around 15 Rs per piece(those times), now i'm sure it would fetch 50 Rs per piece :-)
