Eggless Marble Cake

One of my favourite cakes is this very marble cake from bakeries. You may ask me why the delay in putting up the recipe? But now only did I develop the art of baking so waited for so long to try this beautiful swirled in cake..and also now is the perfect time with Christmas..

We loved every bite of it and above all an eggless cake which can be loved and served to your vegan friends as well and sharing it to all friends!!Do try this out and you will surely love it,too..

Preparation time~ 15 mins
Cooking time ~ 45 minutes
Author ~ Julie
Ingredients
all purpose flour 1 1/2 cups
cocoa powder 2 tbsp
baking powder 1 tsp
baking soda 1 tsp
sugar 1 cup
vegetable oil 1/2 cup
yogurt / curd thick 3/4 cup
milk 50 ml
vanilla extract 1 tsp
salt a pinch

Method
  • Pre heat oven to 350 degrees F. Take the curd in a bowl, add salt, sugar and mix till dissolved. Add in the baking powder, baking soda and wait for 2-3 minutes till it starts frothing and bubbles up. Add the oil and vanilla extract to this.
  • Sift the flour with baking powder, baking soda twice, keep aside. Pour the wet ingredients into the flour gently without disturbing much and fold it over.
  • Divide the batter into two.Add one into the cocoa powder and fold over.Line a 8" pan with butter or cooking spray.Pour the batter into it alternating each one till you finish. Take a fork and then make swirls without disturbing much.
  • Place the pan in the oven and bake for 40- 45minutes or till the tooth pick inserted in the centre comes out clean. Cool on a wire rack.Cut slices and serve with tea!!

NOTES
* If the batter is very thick adjust with milk.
* Donot over mix the batter other wise you will not get the good marble cake.
* Donot shake the cake tin much after pouring the batter too.
