Vermicelli Upma | Semiya Upma (VIDEO)

Vermicelli Upma is one cherished recipe which every one would love to have as breakfast or as snack.A very healthy one and a very lovely recipe. When you are tired of the regular sooji upma, you can try this out.I make it to break the monotonous breakfast normally, enjoy it with a chutney or sambhar or just like that !!!



Preparation time ~ 15 minutes

Ingredients
vermicelli 2 cups
vegetables chopped as desired 1 cup(I used the mixed frozen vegetable pack-beans, carrot, corn, peas)
mustard seeds 1/2 tsp
onion 1 chopped
green chillies 2round chopped
ginger 1/2 inch shredded
water 4 cups
oil 2 tbsp
ghee 2bsp
curry leaves
salt to taste

Method
  • Roast the vermicelli using 2 tsp of ghee, or you can use the roasted vermicelli packet.
  • Chop the onions, chillies, ginger and the veggies as desired and keep aside.
  • Heat oil and splutter mustard seeds and curry leaves.
  • Add in the onions, ginger, green chillies and sauté till lght brown.
  • Sauté the veggies and cook until they are done.
  • After that, add salt and 41/2 cups of water, cover with a lid and let it boil.
  • When the water comes to boil, add  the roasted vermicelli and simultaneously stir (so that no lumps will be formed).
  • Cover the upma with a lid for 5-6 minutes and stir well.
  • Serve hot with coconut chutney / tomato chutney or sambhar!
NOTES
* You can use the roasted packet of vermicelli as well.
* You can add a tsp of chana dal and urad dal, peanuts or cashewnuts for added taste.
* Cut the vegetables small to cook fast.
