Ari Pathiri / Rice Pancake

Ari Pathri is a pancake made of rice flour  and history says the word pathiri originated from the arabic word 'fateerah' meaning pastry.It is still a popular dish among muslims in Kerala and loved by all .there are many varieties of pathiri and I think this is the simplest among them.The Ari pathiri is usually served with chicken or mutton curry.Ari pathiri is a very healthy food and they are very thin pancakes which we keep on gulping without even counting the numbers.




Ingredients
for Ari pathiri
rice flour roasted 1 cup
water 1 1/4 cup
salt as required



Method
TO MAKE ARI PATHIRI-
- Use roasted rice flour or the store brought pathiri powder.(I used the reggular roasted rice flour)
-Boil the required water in a pan and add required salt for flour into the boiling water.
- Add in the flour slowly and prepare the dough.(looks like lumped upma)
-Wet your hands in cold water and then knead the dough when hot like as for chapatis.
-Wrap it in a cling wrap and coat it with a tsp of oil .Make small doughs like for chapati and roll using rolling pin after dusting with rice flour.
-Roll  it as thin as possible.Cut it using a round shaped bottle cap to get the proper round shape or press it in chapati maker.
-Heat a tawa or nonstick pan and cook  each on it.keep on low medium heat.
-Wait till it fluffs,donot wait for brown spots like for chapatis.
-Serve it hot with Chicken curry or mutton curry !!



Notes
* If you donot have roasted rice flour.Dry roast it in a kadai 5-6 minutes without browning on low-med heat.
* You can apply a thin layer of coconut milk on top for added flavor just before serving.
* Also donot stack them when hot.Wait till it cools down.

    @ Chitra :Regarding your query,you can prepare roasted rice flour by just placing the required amount of flour in a kadai and warm it up,keep stirring continously on low medium heat and wait for 5-10 minutes,when you feel the aroma of plain flour disappears.You can stop the flame and pour the flour on a plain paper,spread to cool down.(Make sure you don't burn up or brown up the flour,so keep the heat accordingly.Sometimes lumps do form,don't worry-you can just blend it in the blender once its cooled down.)
