Ingredients
all purpose flour 1 3/4 cup
granulated sugar 2/3 cup
egg 2
baking powder 1 tsp
shelled pistachio 1/2 cup coarsely chopped
dried cranberries 1/2 cup
vanilla extract 1 tsp
salt 1/4tsp
Method
-Sift the flour with baking powder and salt and keep aside.
-Whisk the eggs and sugar together to get a thick ,pale and fluffy.Add in the vanilla extract.
-Add the flour into it and mix until smooth.Fold in the chopped pitachio and cranberries.
-Transfer the dough into a well floured surface and roll into a log shape(the dough may be sticky,flour your hand before you shape) about 30 cms long and 9cms wide.
-Pre heat oven to 350 degrees F and place the log in a baking sheet with parchment paper and bake for 20-25 minutes in the center of the oven.
-Remove from oven and cool on wire rack for 10 minutes.
-Reduce the oven temperature to 325 degrees F and transfer the baked log on a cutting board ,cut 1/2'' slices on the diagonal.Place them on the baking sheet with cut side down and put it in the oven.
-Bake for 8-10 minutes.Turn slices after removing .Place again and bake for 8-10minutes.
-Remove from oven,cool on wire rack completely .Store in air tight containers.
Notes
* You can store these for several weeks.
