Indian sweets with the blending flavor of ghee and sugar gives a nice aroma which no one can resist,we love them a lot.I have never prepared any sweet in India as you find them at every nook and corner sweet shops(except for gulab jamuns).There is no need to make them ,you find it easier to buy them.But here,I love making sweets and never thought it was so simple to make katlis.My favorite is Cashew Katli.I just kept away my favoriteness for a while as I found it difficult to feed almonds to my kids,so yet another way to sneak almonds without their knowledge;disguised as badam katlis.They taste good as cashew katlis and kids just loved munching them.Am happy as a tricky mom as its a simple process to make,so just sharing the recipe for your little ones who dislike almonds: -)
Ingredients
Silvered almonds 1 1/4 cup(I used whole almonds,blanched them)
sugar 1 cup
milk 30 ml / 2 1/2 tbsp
ghee 1 tbsp
cardamom powder 1 tsp
sliced almonds 2tsp
Method
-Soak the almonds in hot boiling water for 10 minutes ,then blanch them with your fingers.(It neatly gives out the skin)
-Heat a pan and dry roast the almonds for 3-4 minutes without the color change.
-Blend the sugar till its fine powdered.Remove in a plate and Add the blanched almonds in the blender, powder it as fine as possible.Mix both the powders well.
-Heat the ghee in the pan on medium flame .Add the powdered mix and keep mixing using a wooden spoon or spatula till its cooked ,add milk and cook till it leaves the sides of the pan.
-Take a parchment paper and transfer the cooked mix into it.Place it in the center and cover with the other half.
-Using a rolling pin,roll it as thin as possible.Open at one side and cut into diamond shapes preferably or into any desired shape.Garnish with sliced almonds on top(optional)
-Wait till its cooled down and then store in air tight containers.
Servings~20 pieces

*You can add almond essence to enhance the flavor.
*You can use silvered almonds as such.
