Romance is in the air,Valentines is close by and you really indulge in munching chocolates just forgetting the extra calories for a week or month.But here I come up with yet another Eggless and butterless recipe of Beets Choco Cake.A very nice one for all dieters and who avoid the chocolate for the sake of shedding the extra calories. Chocolate and beets are yet another wonderful combination,Just like I tried & tested the Eggless Choco-Banana Bread.Beets give a nice color to the cake and a very healthy one as well..So,friends enjoy the choco flavored cake when Valentine is around the corner!!
Ingredients
all purpose flour 1 1/2 cup
sugar granulated 1cup
dark brown sugar 1/2cup
beets 3 medium sized grated
cocoa 2 tbsp
vanilla essence 1 tsp
yogurt 1 cup
baking powder 1 tsp
baking soda 1 tsp
sliced almonds 1/4 cup(can be replaced with any nuts)
salt
oil 1/3 cup
Method
-Wash,peel the skin of beets and grate them fine in a grater.Keep aside.
-Mix the yogurt with sugar,dark brown sugar,baking soda,baking powder and keep aside to froth.
-Sift the flour and add salt,cocoa .mix well.
-Slowly add the yogurt mix and blend well.Then add the oil and vanilla essence.
-Fold in the grated beets and finally add the sliced almonds.
-Pre heat oven to 350 degrees F and line a square or circular pan with parchment paper and grease the sides with oil or butter.
-Pour into the greased pan and garnish with sliced almonds.Bake in the oven for 45-50 minutes or till the tooth pick comes out clean.
-Cool on wire rack and cut into slices.Serve with tea !!
Servings ~ 1 square cake 8*8
NOTES
* You can replace the dark brown sugar with granulated sugar alone.
* The cake is more of a dense and moist cake like the Eggless Dates Cake.
* You can cook the beets first and then puree to add.If you are cooking beets,don't add water.Steam the veggie and puree the cooked after cooling with very little water.
* Cocoa adds nice flavor to the cake.
