Parents always think good for their kids and that goes with food as well.Kids run behind all sort of junk foods and they are easily carried away with colors(my experience:))But we as moms should restrict those bad food habits right from the childhood and inculcate the better nutrition aspects.My elder son is a picky eater now a days(earlier used to have everything)and every damn veggie is his enemy,especially bell peppers,pumpkins,brinjal and so on..I tried all ways and atlast ended up making this simple colorful stir fry with eggs (as egg,fish and chicken are his weakness.)So that worked good for both of us as I could easily incorporate bell pepper into eggs.And this turned out to be good and a healthy stir fry .Enjoy and check this out!!
Ingredients
Bell pepper 1 small chopped
onion 1 medium sized chopped
tomato 1 medium sized chopped
ginger shredded 1 tsp
eggs 2
turmeric powder 1/4 tsp
pepper powder 1/2 tsp
mustard seeds 1/3tsp
salt
oil 2 tsp
curry leaves
Method
-Scramble the eggs and dry up the water.
-Serve with rice or chapatis!!
Servings~3 adults
NOTES
*This stir fry can also be used for sandwich in breads.
* You can add in more veggies as you wish.

-Wash and chop all veggies very thin and small.Heat oil in a non stick pan,splutter mustard seeds.Add the onion,ginger,curry leaves.saute till the onion becomes soft and translucent.
-Add in the tomato and capsicum.Add the spices and salt.
-Make a well in the centre of the kadai and break the eggs.-Scramble the eggs and dry up the water.
-Serve with rice or chapatis!!
