Choco -Cornflakes-Coconut Balls(No Cooking)

Some recipes are just instant hit at my place,though may not be a pre planned one or not even tasted before or seen the recipe.But it does work,Have you experienced this? This recipe is of the same kind, and a big hit too! Its a simple recipe with all available ingredients and without much effort & time.No cooking is involved other than the melting of chocolate in microwave.You can enjoy it at any time of the day and kids will surely ask for more :-)



Ingredients
unsweetened corn flakes 3/4 cup(1/2 cup crushed)
dark chocolate chips 1/4 cup
white chocolate chips 1/4 cup
sweetened coconut flakes 1/2 cup
olive oil 1 tbsp
sugar 2 tsp
almonds whole (to garnish)


Method
-Melt the chocolate chips both dark & white in a microwave safe bowl with olive oil .Mix it well to coat.Microwave for 1 minute or till melted.
-Add in the sweetened coconut flakes,sugar ,corn flakes and mix well.
-Make small balls out of it and shape like pedas and place an almond on top.
-Place it in a tray lined with parchment paper and refrigerate for 1/2- 1 hour.
-Serve as a quick sweet!

Servings~ 8-9 balls



NOTES
* If you are using shredded coconut,dry roast till the water content disppears before adding to the bowl.
* Adjust the sugar accordingly if using unsweetened shredded coconut.

  7. Nice job Julie! My mother-n-law makes a no bake cake loaf similar to this. I'm sure yours are super good, the cornflakes and coconut make an excellent pairing :)
