Day by day the heat is increasing here and we wish to have something cold esp drinks and puddings, ice creams and popsicles,Isn't it to beat the heat?? And so this very pudding was born.I had a packet of strawberries,a pint of heavy cream and gelatin.This is a very simple strawberry pudding which is easy to do by all.I just love the creamy soft texture of the pudding which just melts in mouth.Kids too love this esp the light pink color and a perfect one to set before hand when you have guests at home.Do check this out at home & Enjoy !!!
Ingredients
heavy cream 1 1/2 cup
sugar 1 cup
strawberries 1 1/2 cup+ 1/2 cup hulled & halved
gelatin(unflavored) 1 packet (2 1/2 tsp)
Method
-Wash and hull the strawberries.Cut into halves and add 1 1/2 cups into the blender to get a smooth puree.I usually strain the puree to discard the seeds.Keep aside the remaining cut strawberries.
-Then,whisk the cream until soft peaks.Add sugar little by little and keep whisking till you get stiff peaks.
-Dissolve gelatin in 50ml water and keep for 10 minutes.Then either double boil to dissolve the gelatin or add hot water into the bowl ,keep stirring to dissolve it completely.Let it rest to room temperature.
-Add the strawberry puree in the whipped cream mixture and fold in with a spoon or spatula.
-Then add the gelatin mix at room temperature into the pudding,fold it gently.
-Add the 3/4 of the halved strawberries kept aside,combine to coat evenly.(Reserve 1/4th for garnish)
-Pour in a square pan of 8*8 size ,garnish with left over halved strawberries and refrigerate for 4-6 hours.
-Cut into pieces & serve chilled !!
SERVINGS~ 8*8 square pan of pudding
NOTES
* You can use fruit pectin in place of gelatin if you are a pure vegetarian.
* You can omit the halved strawberries if you wish to get a smooth consistency.We like bite size pieces in between and so have added.
* You can also set it up in individual pudding bowls.
