Jujips, a well versed sweet with many and a kid pleaser too.The recipe is very simple and easy to prepare.I found this recipe when Asha @ A Tasty Challenge posted at her space.I tried it out,came out perfect.Thanx to Asha for sharing this recipe,my kids really loved it and enjoyed.Do check this out for your kids summer treat,you will surely enjoy making them at home :-)
Ingredients
water 1/2 -3/4 cup
light corn syrup 1 tsp
unflavored gelatin 3 tbsp (refer notes)
sugar 1 1/2cup
salt a pinch
lemon juice 1 1/2 tbsp
coarsely ground sugar 1/2 cup
food colors & essences 2-3 drops each
Method
-Soak gelatin in 1/2 cup room temperature or cold water for 15 minutes.
-Boil 3/4 cup water in a deep heavy pan on high heat,add sugar and salt.Stir and let it dissolve.
-Add the soaked gelatin in the boiling water and stir until it melts.
-Wait till the mixture boils again.Once boiled,set your timer to 15 minutes and keep stirring.(refer notes)
-Add the light corn syrup and continue to stir another 1 1/2 minutes.
-Add in the lemon juice and switch off the flame.
-Remove as much foam as possible formed on top of the boiled mixture and transfer to another bowl.
-Divide the mixture in different bowls and add the food color,essences.
-Pour into small trays or bowls each flavor keeping in mind the bowl used decides the thickness of jujips.
-Refrigerate for 16-18 hours and then wait till solidified.Once solidified,run along the edges.Sprinkle some sugar on top to prevent sticking and turn on a cutting board.Cut into pieces and sprinkle some amounts of sugar to coat.
-Serve and store at room temperature.
Servings 25-30 jujips
NOTES
* If you are using sachets of gelatin use 4 of them.
* The boiling mixture has a tendency of boiling over,so keep stirring the mixture.
* Liquid glucose is replaced with corn syrup in US.If you are living in India,you can use liquid glucose.
* If you use coating granulated sugar in US ,it is finely granulated.The granulated sugar in India needs to be crushed first and then coated.
* The color-flavor combination ; yellow food color & banana extract, red food color & strawberry extract, orange food color & orange extract, yellow food color & mango extract.
