Apple upside down cake is a lovely glistening slices of sweet & sticky caramelised apple sitting happily on top of a fluffy butter cake.The cake is prepared by making a caramel syrup topping that adds the buttery taste to the cake.The topping is poured in the prepared cake pan and then the apples are arranged.After bake,the cake is inverted to get the actual pic and adds sense to the name of the recipe.The cake is very soft & delicious with the baked apples & topping.This is the second result of the apple picking,after I successfully tried the Homemade Apple jam.I tried the cake with golden delicious apples.Do try it out & enjoy making it at home!!
Ingredients
for cake batter
all purpose flour 1 1/2 cups
granulated sugar 1 cup
unsalted butter 1/2 cup softened
eggs 2 (yolk & whites separated)
milk 1/2 cup
vanilla extract 1 tsp
baking powder 2 tsp
salt 1/4 tsp
for topping
unsalted butter 4 tbsp
light brown sugar 3/4 cup
apples(any variety) 2 peeled,sliced (1/4" thick slice)
maraschino cherries 3-4 (optional)
Method
-Pre heat oven to 350 degrees F and line a 9" cake pan with butter.Place the rack in the middle of the oven.
Prepare the topping-
In a sauce pan,heat the butter,brown sugar over medium heat until the butter is melted and sugar is dissolved.Continue to cook without stirring until the bubbles appear at the edges of the pan.Remove from flame and pour it into the prepared cake pan.Arrange the sliced apples and cover the centre with halved cherries with the convex end facing down the pan.
Prepare the cake batter-
-In a large bowl,whisk the flour,baking powder and salt.
-In another bowl,beat the butter and sugar until soft and fluffy.Scrape down the sides and add in the vanilla extract.Add in the egg yolk one at a time,beat well.Then alternate flour with milk and combine well until incorporated.
-In another bowl,beat the egg whites (refer notes).Lightly beat it and then add a pinch of salt.Beat the egg whites until stiff peaks.
-Fold in the egg whites in the batter and make big strokes so that the air in the egg white is not deflated.
-Pour the batter on top of the arranged slices and smooth the top of the batter.
-Place it in the oven and bake for 45-55minutes.(Mine was done at 43 minutes)
-Remove from oven and cool on wire rack for 10 minutes.Run a knife through the sides of the pan and invert the cake on the cake stand or a large size serving plate .
-Cut and serve !!
Servings ~ one 9" round cake
NOTES
* Always beat the egg white in a clean grease free bowl and blades.Otherwise you may not get the right peaks.Cream of tartar can be added to egg white to stiffen the peak,however a pinch of salt can be added too.
*The same method can be used to prepare a pineapple upside down cake too,just replace the apple slices with pine apple.
* You can notice slight missing gaps of apples in between esp the center portion that's because I haven't densely packed the center,when u make it kindly pack all gaps with sliced apples.
