Pineapple Pullissery | Pineapple in yogurt & coconut sauce

Pullissery refers to the yogurt based curry with coconut paste.Usually the regular affair of pullissery is with mangoes at home,but this I had some fresh pineapple.So,just modified this way.Do u crack your heads what is to be prepared today for b'fast/lunch/dinner?? I usually face this problem every other day.When I was a kid,mom used to complain the same and we never realised what did that mean until I was in the same shoes.Stories apart,try this curry if yopu have fresh pineapple slices/cubes.The curry goes perfect with rice.Sadya menus in Kerala have this dish.So,do check it out !!

Ingredients
to cook
pine apple 1 cup cubes (1/2 of medium sized pineapple)
red chilly powder 1/2 tsp
turmeric powder 1/3 tsp
salt

to grind
coconut shredded 1/2 cup
cumin seeds 1/2 tsp
green chillies 2
turmeric powder a pinch

yogurt beaten  1 & 1/2 cup(mildly sour)

to season
fenugreek powder 1/4 tsp
red chilly  dry 2-3
shallots chopped 4-5(refer notes)
curry leaves 4-5
mustard seeds 1/2 tsp
oil 2 tsp


Method
-Heat a pan,add the pine apple cubes,chilly powder,turmeric powder and salt with enough water to cook the pieces.The pineapple pieces should be cooked & tender.
-Grind the ingredients listed under 'to grind' to a smooth paste.
-Add this paste to the cooked pineapple pieces,simmer the mix for 5 minutes.
-Add the beaten yogurt in the lowest flame,Keep stirring to avoid curdling.Switch off flame and remove from heat.
-In another pan,heat oil .Splutter mustard seeds,fry red chillies,curry leaves followed by shallots.The shallots should change color to pinkish brown.Add in the fenugreek powder.
-Add this seasoning on top of pullissery and serve.


Servings~ 3-4 adults

NOTES
* You can use fenugreek seeds instead of powder as well.
* I didn't have shallots in stock & haven't added shallots chopped for seasoning.
