Chickpea-Avocado Salad in Lettuce Wraps

Days have started brightening up early now and another one week  to start day light savings.The saddest part of the story is to get up early.Anyway,seasons come and go as part of nature's rule.Today's recipe is a simple chick pea-avocado salad in lettuce leaves.Its a very long time since I posted salads and I think springs and summers are the best relishing time.This is  a very healthy filling salad with a yummy dressing which you can enjoy for brunch.We loved it,now its your turn to prepare and enjoy !!!


Ingredients
chick peas boiled 1 cup
avocado 1
tomato 1 or grape tomatoes 1/2 cup
lettuce leaves 2-3
for dressing
honey 3/4-1 tbsp
olive oil 1tbsp
white vinegar 1 tsp
salt to taste
pepper to taste


Method
  • Boil chick peas in a cooker with salt and water for 2-3 whistles.Drain water,keep aside.
  • Wash and cut the avocado,scoop out the pulp.Cut in pieces.Keep aside.
  • Cut the tomatoes,keep aside.
  • Prepare the dressing by mixing honey,vinegar,salt and pepper.Drizzle olive oil.
  • Mix the dressing and the chopped avocados,tomatoes and chick peas.
  • Wash and keep each lettuce leaf in a plate.Scoop the chick pea salad about 3tbsp in each leaf.Wrap around and cover,Enjoy !!!

Servings~ 3 servings

NOTES
* You can replace chick peas with cooked chicken breasts if you prefer that.
* I have used roma tomatoes in this recipe.
