Potato Stuffed Paniyaram

Dosa and Idlis are the main staple food of South Indians.And invariably there are many recipes linked with dosa/Idli batter.Paniyaram is one such similar snack that works great to finish your left over batter and a very healthy guilt free snack too.Though I tried a simple kuzhi paniyaram recipe sometime back but this is a little more interesting version of that.Sometime back,I just happened to have left over masala dosa stuffing and dosa batter.And,kids were not in a mood to have masala dosa any more for the evening tea.That's how this interesting snack was born,but then that day they gobbled them super quick and so there was no scope to photograph these tiny bites.Now,this time took photographs before they could attack and it was just delicious,try these at home !!!



Ingredients
dosa batter 1 cup
rava/semolina /suji 1/4 cup
salt to taste
for stuffing
potato 2 boiled and mashed
frozen peas 1/3 cup
onion 1 large chopped fine
ginger garlic paste 1 tsp
green chillies chopped fine 2-3
turmeric powder 1/2tsp
tuvar dal /urad dal 1tsp
mustard seeds 1/2 tsp
cilantro 3-4 sprigs
salt to taste
oil 1 tbsp


Method
  • Prepare the stuffing- Heat oil in a pan,splutter mustard seeds when hot.Add in the urad dal,add sliced onion and saute till slightly browned.Add in the ginger-garlic paste.Add the green chillies.
  • Add the frozen peas,salt and turmeric powder.Cover for 2-3 minutes on medium flame.When the peas are tender,add the mashed potato.Give a quick stir.Put off flame,let it cool.
  • Make small balls( half the size of your paniyaram pan's holes).Keep aside the balls.
  • 1.Heat the paniyaram pan,add 1-2 drops of oil in each hole.In the meantime,Mix the dosa batter with salt if required and add rava.Give a nice stir without lumps.
  • Now spoon each hole with dosa batter about 1 tsp each in all holes.Place the prepared stuffing ball on top and then scoop another spoon of batter on top so as to cover the filling.(sorry about not taking step wise pics)
  • Then,wait till the sides gets browned slightly and bubbles break at the surface.Flip with a skewer or fork.Let it cook both sides,Remove on  a paper towel.
  • Repeat the step 1 mentioned above for rest of the batter until you finish the remaining batter and balls.
  • Enjoy the stuffed paniyaram with your desired chutney.We enjoyed with coconut chutney !!

Servings ~ 24 small paniyaram

NOTES
* You can use left over masala dosa filling too to make this evening snack.My first experiment was with left over masala dosa filling.Works perfect.

Very tempting, I have eaten sweet paniyaram and also my mom makes paniyaram with just dosa batter without the potato addition in the kuzhi pan but never tried this potato stuffed paniyaram and it looks ultimate!! I should try this one. Thanks Julie.
