Summers are half way through in all places and cool,refreshing drinks,ice creams are on high demand.Pista kulfi is one such Indianised ice cream that any would love to lick it on a hot summer day.This recipe was first tried by one of my friend,Preetha and was served to us for a potluck a year back.I had noted this recipe then and then hibernated.But good tastes are not easy to wipe off soon from our taste buds,so I tried out this recipe just to satisfy my naughty ones.It turned out really good and am happy that I tried.Kids loved it,for them it was like tasting rasmalai syrup once it started to melt down and had the crunchy bites of pista too..Enjoy making this quick and yummy recipe !!!
Ingredients
evaporated milk 1 cup
condensed milk 1 cup
cool heavy whipping cream 1/2 cup
granulated sugar 2tbsp
half n half 1/2 cup
pistachio chopped 1/3 cup + 1 tbsp
cardamom 4 pods /cardamom powder 1/2 tsp
green color 3 drops(refer notes)
Method
-Whip the cool heavy whipping cream until soft peaks in a chilled bowl with granulated sugar.
-Whip the condensed milk,evaporated milk,half and half in a blender for a minute or so.
-Gently fold in the whipped cream to this mixture in a bowl.
-Add in the chopped pistachios,reserve the 1 tbsp.
-Add cardamom powder,mix and pour in pista moulds or glasses or popsicle moulds.(I used steel glasses and then covered it with cling wrap.Insert/poke a cut skewer or ice cream stick in the center piercing the cling wrap so that the stick holds in position.)
-Freeze for 6 hours until its is set.Remove from freezer and pour tap water on the sides of the mould or glasses just to loosen it up,gently twist n turn,invert it on a plate.Garnish with the reserved pistachios.
-Enjoy cool creamy pista kulfi !!!
NOTES
* You can use cool whip instead of heavy whipping cream too for quicker preparation.I had heavy whipping cream in my refrigerator so opted that way.If you are using cool whip then omit the granulated sugar as it already has sweetness.
* Though my friend had used green food color in her recipe and so mentioned but I just omitted using that just to keep it good naturally.Instead I just added few chopped & sliced pistachio on top for a added crunch,
