Paalappam/Laced rice pancakes is a traditional Kerala breakfast dish prepared with rice and coconut milk.'Paal' refers to coconut milk and 'appam' refers to the pancake in malayalam.It is usually served with stew/curries (listed below).I had posted the recipe of traditional paalappams sometime back,if you remember.But how about a wheat paalappam(pancake) with all the softness and flavors of coconut milk.I made both wheat paalappam and the traditional paalappams (updated old pics) the same day and the only difference that I found was the color,these have a brownish tinge otherwise they taste almost similar to the traditional ones.We had it with a simple chicken curry and loved it.If you wish to enjoy a different color paalappam,then do give these a try !!!

Ingredients
whole wheat flour 3/4 cup
thick coconut milk 1 cup
sugar 2 tsp
yeast 1/4 tsp
salt to taste
Method
-Blend the wheat flour and thick coconut milk until smooth.Add in the yeast and sugar,blend again half a minute.
-Leave for fermentation for 5 hours.
-Add in salt and adjust the batter to desired consistency like in original paalappam/lace rice pancakes recipes.Mix well.
-Heat a appachatti /appam maker on low medium flame.Pour a ladle of batter in the center and then holding both sides of the pan swirl the batter evenly.
-Cover the appachatti and let it cook on low medium flame for 2 minutes.Uncover lid and wait till the sides become crisp and lace like.
-Remove on a plate and wait till its warm before stacking one above the other.
-Serve warm with some chicken curry/chicken stew/corn stew/egg curry/mutta aviyal or any other curries of your choice.
Servings~ 6 appams
NOTES
* Don't over ferment the batter more than 5 hours.
* I used regular Ashirvad atta /wheat flour for making this.
* It tastes just like rice paalappams and is distinctively changed with its color.
* These ones don't require pav kachiyathu /cooked rice step.
* Increase the quantity of ingredients by keeping the ratio same as per your requirements .
