Ethakka(Nendran Pazham) Cutlet | Ripe Plantain Cutlet | Sweet Cutlets

Ethakka cutlets,anyone??This was another scratch and win recipe tried by me,sometime back.These are sweet cutlets with a yummy tasty filling.Though I have tried a few recipes with ethakka(ripe plantain) in the past(listed below) but this was very much liked by my kids as these are sweet and the ghee flavors makes it all the more splendid.Ripe plantains are very rich in fiber and are perfect for kids.I have shallow fried the cutlets but you can always deep fry these.Do give this a try as a after school snacks and am sure kids will ask for more :)

  

Ingredients
ripe plantain /ethakka 2
aval/beaten rice 1/4 cup 
grated coconut 1/4 cup
sugar 1 or 2tsp
raisins 1/4 cup
cardamom powder 1 tsp
ghee 3-4 tsp

to coat 
egg 1
bread crumbs as required
oil to fry


Method
  • Wash the plantains under running water.Snip off the head and tail ends,cut in two halves or three and place it in a steamer (with skin on)with adequate water.Steam the plantains until cooked well and switch off flame.
  • Once cooled,peel the skin and mash the plantains.Remove the hard seeds inside,if its soft leave as it is.(optional)


  • Heat ghee in a pan and add the raisins.Fry till bloated up,drain on a plate.Add the grated coconut,sugar.Saute for a few seconds and then add the mashed plantain and beaten rice.Mix well so that it leaves the pan to form a ball.Switch off flame.Add the fried raisins and mix well.
  • Once warm or cooled ,make shapes in your palm as to make cutlets.
  • Beat the egg well in a bowl.Dip each cutlet in this and roll in bread crumbs.
  • Do this for all cutlets.Heat oil in a kadai or shallow fry using lesser oil.
  • Flip and turn both sides until golden brown.Drain on paper towel and serve warm !!
Servings~ 10 cutlets


NOTES
* You can omit the beaten rice if you wish but it does adds  to the texture.
* You can use milk instead of egg if not using egg.
* You can add broken nuts or coarsely chopped almonds or cashews to make it a bit crunchier.
* Adding sugar is as per your sweet tooth.Omit if you have a mild sweet taste.
