Tahini is nothing but roasted ground sesame seeds.This paste is used in many North African,Turkish,Greek and Middle eastern cuisine.Mostly it is used as a dip and also as a topping for falafel,shawarma and to make hummus. This recipe was added long back to my draft and wanted to try at home but somehow went postponing as there were many different things to try.Finally,I just tried making this at home and liked the nutty taste without any sweetness and the delicate roasted sesame flavor.Compared to peanut butter,tahini has higher levels of fiber and calcium and lower levels of sugar and saturated fats.This is also a healthy source of protein.I added this to hummus(the recipe follows) and enjoyed.You can use it as dip or as topping or make hummus.Enjoy!!!

Ingredients
sesame seeds 1/2 cup
olive oil 1/8 cup
salt to taste
Method
-Pre heat oven to 350 degrees F.Toast the sesame seeds on a parchment lined tray for 6 minutes and re spread the sesame by mixing it for another 6-8 minutes or until sesame seeds are toasted,golden brown and fragrant.(Mine took another 2 minutes.)
-Pulse in a blender until sesame seeds are broken and then add olive oil ,blend to a smooth paste once cooled.Add more olive oil if required if mixture turns thick by 1 tsp gradually.Season salt.
-Transfer to air tight containers and store in refrigerator for a month or use for making hummus.
Yields ~ a small ramekin(approx. 1/2 cup)
NOTES
* Transfer the toasted sesame seeds immediately to prevent residual heat cooking

ReplyDeleteIt never came to my mind to make tahini myself; makes sense, because sesame seeds are cheap, and tahini is not!
ReplyDeleteLooks tasty and nutritious; sesame seeds are also a good source of calcium. I love tahini, but buy it plain so I can use it in sweet or savoury dishes. Mixed with date syrup, it is a fantastic toast spread and a change from pb. We make it in our Omniblend- would work in a Vitamix or Froothie too- and don't need to add any oil.
