Sabudana vadas reminds me of my college days especially the hostel days.We were served this snack once in a week and those days we had become bored munching these vadas too.These are a popular snack from Maharashtra but other states do make a similar version with some changes though.Sabudana/Sago is well known as 'Chawwari' in Kerala.These vadas are crisp outside but soft chewy inside.They are very delicious but tend to drink up oil a lot.Nostalgia always makes you crave for things that aren't around us and so gave this snack a try to just kindle my hostel memories.Kids liked it as it wasn't spicy and was yummy with mashed potatoes.Try this if you love this snack and are not conscious about deep fried snacks !!

Ingredients
sago /sabudana/ chawwari 1 cup
potato 2 large
peanuts 1/2 cup
cilantro chopped 2tbsp
green chillies 2-3
cumin seeds 1 tsp
salt to taste
sugar a pinch
lemon juice 1 tsp
rice flour for dusting
oil for frying

Method
- Soak the sabudana in water for 3-4 hrs or overnight.(This totally depends on each type of sabudana,some bloat up soon but some take overnight to swell up.)
- Boil the potatoes in a pressure cooker with salt.Mash the potatoes well,keep aside.
- Check the sago pearls by pressing it with finger tips,if it gets mushed up then its done.Drain the water from sago in a strainer(let all the water drain out,it may take 10-15 minutes) completely else the vadas may become soggy.
- Dry roast the peanuts in a pan.De skin and roughly chop it coarsely in small bits.(Blender may powder it up so roughly chop with knife)
- Mix the mashed potatoes,drained sago,cumin seeds,chopped peanuts,chopped cilantro,salt,sugar,lemon juice.
- Heat oil in a pan and dust your palm with rice flour.Scoop out large gooseberry size balls and shape them in vadas.Slide it in the hot oil and wait till its lightly browned on sides.
- Flip and turn both sides until crisp.Drain using a slotted spoon and place on thick sheets of paper towel.
- Serve hot with ketchup or just like that.
NOTES
* I used half cup of peanuts as per original recipe but I think 1/3 cup of peanuts is good enough.
* I used half of cilantro and mint leaves but you can use either way.
* Adding 2 chillies yielded mildly spiced vadas.Add more if you wish more spiciness.
