Black eyed peas (lobia)also known as cow peas,are actually beans and not peas.They are an excellent source of fiber,a good source of protein,iron and potassium.I had always used these beans in making stir fries until recently when one of my good neighbours served us this healthy delicious snack.We totally loved it and I was hooked up with this recipe as I got a good way top sneak in lobia for kids.Usually the black eyed peas are easily picked and kept separate whenever I add in stir fries.This was an excellent solution to the problem and they liked this much more than stir fries.Now,I had been making this for a while and thought to share it with all.These vadas are crunchy outside like parippu vadas and soft inside.They are infused with mint flavors too.Give this a try & enjoy these healthy crisp vadas with a cup of tea !!
Ingredients
black eyed peas /lobia 1 cup
mint leaves a small bunch
ginger a small piece
green chillies 2-3
medium sized onion 1/2 chopped
salt to taste
oil to fry
Method
NOTES
* I have used mint leaves as they give flavor and aids in digestion but you can use cilantro or curry leaves too.
* Modify green chillies as per spice tolerance.

Method
- Wash and soak the black eyed peas in water for 6 hours or overnight.Drain the water and add it to the blender.
- Add mint leaves,ginger,green chillies.Grind it to a fine paste by adding few drops of water.
- Transfer to a bowl and add salt.Add in chopped onion.Mix well just like we do in making masala vada/parippu vada.
- Heat a pan and add oil.When the oil becomes hot,scoop out lemon sized balls.Flatten it a bit like vadas.Add in the sizzling oil.
- Flip and turn both sides till golden brown crisp.
- Drain on paper towel and serve warm with ketchup.

I use black eye peas in soups, thoran and Chili. Making vadas with them is a great idea.
