Cold weather due to winter chills,or heavy rains are perfect season to enjoy a bowl of warm soup.What say?? Soup acts like refresher or a energy capsule and also well known to increase appetite too.I love sipping warm soups and watching rains sitting beside the window.Cream of celery soup is one such soup that can be served with a toasted bread or with croutons.Celery has a mild acid content that gives a tart tangy flavor but adding potato reduces the acidic flavor very much.There are lots of fibers in this vegetable,so if your blender/mixer doesn't grind it fine then may have to strain the soup before bringing to boil again.I was a bit apprehensive about kids acceptance to celery soup but to my surprise,they finished the bowl first.This soup is thick in consistency and it can be made slightly thinner by reducing the amount of potato.I totally loved the color of the soup,a refreshing feel.Do try and enjoy !!
Ingredients
celery 2 cups chopped
sweet onion 1/2 of 1 or 1/4 cup chopped
potato boiled and cubed 1
vegetable stock/water 4 cups
salt to taste
pepper to taste
butter 1 tbsp
Method

Method
- Wash and chop the celery fine.Similarly chop the onion too.
- Heat a pan and add butter,wait until melted.Add the chopped celery,onion and a pinch of salt.Saute for 2-3 minutes until celery starts to leave out water and onion turns translucent.Switch off flame.Add the boiled cubed potato.Leave to cool.
- Blend this mixture in a blender/mixer until smooth.Add vegetable stock/water as required(may be a cup or less).
- Add in the remaining vegetable stock/water and pour in the blended contents.Bring to a boil and let the soup thicken for a minute or two,add salt.Switch off flame,add pepper powder as per your tolerance and taste.
- Serve it in bowls,garnish with a celery leaf and enjoy !!
Serves ~4 bowl
NOTES
* Try to use organic celery for better benefits.
* I have used sweet onion but you can use green onion in case you don't find sweet onion.Red onion may not suit the flavors here.
* I didn't strain the soup but you can always do that if your blender /mixer doesn't grind the fibers very smooth.
* Butter adds to the flavor so try avoiding to replace with oil.
