Kadai Mushroom is a simple curry that can be served with chapathis/rotis/naan.Do you crack your heads to prepare curry/masala for rotis ?? I sometimes find it difficult to prepare veg curries for chapathis and end up making a masala generally mixed up with potatoes.Potatoes are starchy and so sometimes I avoid this vegetable too.Kadai mushroom is mildly spiced with green chillies and can be prepared in a jiffy.The cashew paste adds a rich flavor with the tanginess of tomatoes.Bell pepper and mushrooms together makes a healthy combo with the kasoori methi flavors.Do give this a try and enjoy !!
Ingredients
button mushrooms 10-15
green bell pepper 1 medium sized
turmeric powder 1/4 tsp
cumin seeds 1/2 tsp
chilly powder 1/4 tsp
coriander powder 1tsp
garam masala 1/4 tsp
kasuri methi 2tsp
asafoetida a pinch
cilantro chopped 2tbsp
salt 1/2 tsp or to taste
oil 2tbsp
to grind
tomatoes 2 medium sized
cashew nuts 10
ginger 1" piece
green chilli 1
Method
NOTES
* Wash the mushrooms very quick under running water as they tend to absorb water or wipe them with a paper towel.If you are washing,then dry them with a paper towel quickly.
* Soaking the cashews for 15 mins in warm water grinds it smooth.

Ingredients

tomatoes 2 medium sized

ginger 1" piece

Method
- Heat a pan and add 2 tsp of oil.Add the cubed bell pepper for 2 minutes until slightly cooked.
- In the meantime,grind the tomatoes with ginger,green chilli and cashews to a smooth paste.
- Add the remaining oil,wait till its hot.Add asafoetida,cumin seeds and turmeric powder.Add the ground paste,coriander powder,chilly powder.Cook the masala till oil starts floating on top.
- Add the sliced mushroom and bell peppers.Mix well with the addition of garam masala.Stir for 2 minutes.
- Add half cup water and adjust salt.Cook covered for 3-4 mins,add kasoori methi and garnish with cilantro.
- Serve hot with naan/chapathis /rotis.
